Ingredients
- 1.5 pounds of potatoes (golden is preferred)
- 2 tablespoons of fresh dill chopped (a bit more for garnish)
- 1/2 cup of sour cream
-
2 tablespoons of Maine-ly Drizzle's Dill Olive Oil
- 1 teaspoon Garlic Powder
-
Maine-ly Drizzle's Sea Salt and fresh pepper to taste
-
1 tablespoon Maine-ly Drizzle's Extra Virgin Olie Oil
Directions
Cut potatoes into large chunks. Boil in water in a medium to large pot (I add a couple of fresh garlic cloves, but this is optional) until soft enough to pierce with a fork easily. Drain.
Transfer to a large bowl. Mash using method you are comfortable with. Add 1 tbsp. of EVOO and 2 tbsp. of Wild Dill Infused Olive Oil, sour cream, garlic powder, and a handful of fresh chopped Dill (a tablespoon or two). Mix together.
Add sea salt and fresh ground pepper to taste.
Transfer to a plate, garnish the top with fresh chopped dill, a drizzle of EVOO and Wild Fernleaf Dill Olive Oil.
