Vegan "Egg" Salad Sandwich with Lemon Green Tahini Dressing
Lunch - Brunch - Dinner
- Tofu (firm or extra firm) - drain and use a paper towel to gently squeeze the water out. You don't want watery tofu.
Wozz! Lemon Green Tahini Dressing
- Chopped Fresh Onion or Green Onion (as much as you want - this is a sandwich I didn't measure)
- Good Hearty Sliced Bread
Dice up your tofu and add to a mixing bowl. Add chopped onion and liberally drizzle lemon green tahini over. With a fork mash together (just like when you make egg salad).
Add more Lemon Green Tahini Dressing and salt and pepper until you get the taste you desire.
Make your sandwich. Serve with a pickle.
