Seared Scallops with Maine-ly Drizzle's Curry Sauce
Lunch - Brunch - Dinner
2 teaspoons Maine-ly Drizzle's Curry
- ½ cup plain yogurt
- 1 tablespoon apple jelly
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- salt to taste
- 1 pound fresh sea scallops
- 1 tablespoons olive oil
Mix first 5 ingredients in order and season with salt. Refrigerate until needed
Heat seasoned cast iron skillet over high heat. Add oil to pan and quickly add scallops. Sear until brown, about 3 minutes.
Flip over and repeat on other side being careful not to overcook.
Scallops should start to split and will be opaque throughout.
Remove sauce from refrigerator, spoon on plate, and serve scallops on top of the sauce.
