Prosciutto Poached Salmon

Ingredients
- Raw salmon
- 1 c. White Wine
- 1 qt. Water
- 1 sm. Onion, or ½ lg. Onion, quartered
- leave skin on onion for more flavor
- 1 stalk Celery, chunked
- 1 Carrot, peeled and chunked
- 1 or 2 Bay Leaves
- 1-2 t. Peppercorns
- Parsley stems
- Reserve leaves for garnish
- ½ Lemon, sliced
Directions
Add all ingredients, except the wine and salmon. Let simmer until the aroma of ingredient becomes full (Important: Do NOT let this liquid come to a boil at any point!).
Add the wine and salmon together. Let simmer for 25 minutes, then remove salmon from liquid.
If serving cold, chill uncovered in refrigerator prior to serving.
