Chicken with Balsamic BBQ Sauce

Ingredients

  • 1 cup balsamic vinegar, such as the Traditional 18-year 

  • 3/4 cup ketchup
  • 1/3 cup brown sugar
  • 1-2 garlic cloves, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon Maine-ly Drizzle Paprika

  • 4-6 pieces of chicken
  • salt and pepper

    1. Combine vinegar, ketchup, brown sugar, garlic, Worcestershire sauce, mustard, salt and pepper in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth.

    2. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes.

    1. Place a grill pan over medium heat or preheat your grill. Season the chicken with salt and pepper.

    2. Lightly coat with some of the BBQ sauce using a pastry brush. Place the chicken on the grill. Place the remaining BBQ sauce, still in the small saucepan, over low heat or on the edge of the grill and allow too gently simmer while the meat cooks.

    3. Cook the chicken about 8 minutes per side. Continually brush the meat with barbecue sauce every few minutes. Remove the meat from the grill and let rest for at least 5 minutes. 

    4. Serve with the heated barbecue sauce alongside.
