Ingredients

2 Pints grape or cherry tomatoes

2 Tlbs Maine-ly Drizzle Tuscan Herb Oil

2 Tbls Maine-ly Drizzle Tuscan Seasoning

1/2 cup fresh basil leaves

2 cups shredded mozzarella

1 pk puff pastry (2 sheets)
Directions
Cut tomatoes in half. In a medium bowl, toss tomatoes with oil and seasoning, until well coasted. Spread a single layer on a sheet pan. Bake at 350 for 18 minutes. Cool to room temperature.
Chop basil by hand or food processor. Add the roasted tomatoes and mozzarella. Pulse until blended (6-8 times).
Roll out one sheet of puff pastry on parchment paper to approximately 10x12. Spread 1/2 of the tomato mixture evenly over the puff pastry. Roll up tightly, creating a 12 inch log. Wrap in the parchment paper and place in the freezer for 20 minutes to firm up the roll. Repeat with the remaining puff pastry and tomato mixture. Freeze as well.
Preheat oven to 350 degrees. Remove the first roll from the freezer. Unwrap from parchment and slice into 24 1/2 inch rounds. Place rounds on a greased sheet pan. Bake for 18 minutes. Repeat with the remaining roll. Serve warm.
