Smoked Gouda Macaroni Fritter

Ingredients

2 Tbs. Shallots, minced

4 oz. Butter

6 oz. Flour
-
1 quart Cream
-
4 oz. Chardonnay
-
4 oz. Smoked Gouda
-
Salt and Pepper to taste

1 lb. Elbow Macaroni, cooked

Toasted Onion Sea Salt to taste
Directions
Melt butter in saucepan and sauté shallots for 2 minutes. Add flour and cook for 3 more minutes. Add cream and wine. Bring to a boil, then add cheese and simmer for 5 minutes
Season with salt and pepper. Stir in macaroni and chill overnight.
Scoop into small balls and bread. Deep fry until golden brown. Season with toasted onion salt.
