Cajun Black Beans
1 tablespoon New Orleans
1 can (16 ounces) black beans, drained
1 tablespoon olive oil
½ medium Vidalia or yellow onion, thinly sliced
1 tablespoon sherry, sweet is preferred
Heat oil over medium heat, add onion and sauté to soften, about 5 minutes.
Add sherry and cook for 1 minute.
Add beans and New Orleans, mix thoroughly, reduce to low heat and cover. Cook for 10 minutes, stirring occasionally and serve.
