Ingredients

3 dates, pitted
-
1 ½ oz. goat cheese mix (see below)
-
3 bacon slices
-
3 pieces Belgian endive
-
1 oz. pea shoots
-
¾ oz. Black Mission Fig Vinegar reduction
-
1 package of goat cheese
-
2 egg yolks
-
½ tbsp. shallots
-
1/8 tbsp. Tuscan herb seasoning
-
Salt and pepper to taste
For the Goat Cheese
Directions
For the Bacon Wrapped Dates
Remove the pit from the date and open up the center with your finger.
Fill dates with goat cheese mix.
Wrap each date with a slice of bacon.
Place on a buttered sizzle platter and broil for 8 minutes.
Arrange the Belgian endive and place the dates on a plate.
Top dates with pea shoots.
Drizzle with fig vinegar reduction.
For the Goat Cheese
Combine all ingredients.
Whisk thoroughly until all lumps are gone.
Place in a clear plastic pastry bag.
